CELIAC DISEASE

Some people might call it a curse, or say that they are unlucky. Instead of making it negative and going on about how I can’t eat everything I love, I have decided to take my disease and turn it into something else. I have decided to make my experience educational and to find ways to make those foods I love gluten free.

 

 

Not many people know about Celiac disease. Let’s get a Celiac Education, together.

 

 

Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by a substance called gluten. This results in the inability of the body to absorb nutrients such as; protein, fat, carbohydrates, vitamins and minerals, which are necessary for good health.

 

 

According to the Canadian Celiac Disease Association, it is estimated that 1 in 133 persons in Canada is affected by Celiac disease.

 

 

Gluten is a protein found in wheat, rye, triticale and barley. In the case of wheat, gliadin has been isolated as the toxic fraction. It is the gluten in the flour that helps bread and other baked goods bind and prevents crumbling. This feature has made gluten widely used in the production of many processed and packaged foods.

 

 

Celiacs must be alert to hidden sources of gluten such as HVP/HPP (hydrolyzed vegetable/plant protein); malt; spelt; kamut; and certain drug products. Even processed and packaged foods have many hidden sources of gluten which can be unintentionally ingested.

 

Any time someone with Celiac Disease, "Celiacs" go to eat or use anything, they have to read the list of ingredients every time. It doesn’t matter if you have used the product before sometimes with new branding there’s also new ingredients.

 

 

Gluten is in everything and not just food. It’s in shampoo, conditioner, makeup, beverages and even toothpaste.

 

 

Currently, there is no cure, but Celiac disease is typically treated by following the gluten-free diet, FOREVER!
